'chicken inasal' as how Ilonggos would call it
In Cebu, if we say 'inasal', we mean 'lechon baboy'. Lechon baboy is cooked by grilling a whole pig with its stomache filled with all those condiments. The innocent pig (hehe) after being slaughtered and cleaned is inserted (what's a better term for this?) with a bamboo from its mouth down to the butt part (haha again, any better term??) then the bamboo is rolled over heating charcoal. Lechon is one of Cebu's famous delicacies. A celebration is not complete without a lechon especially on fiestas. In Bacolod, friends told me that they have their version of 'inasal'. What they have is chicken inasal, not pork inasal (pig inasal doesn't seem to sound right). They say our version of chicken inasal is not quite good as theirs.
Last night, we went to Tres Amigos, a simple cheap kiosk something located in the streets of Lapulapu City. It is owned by some folks from Bacolod so they sure serve their famous chicken inasal. Well then, their grilled chicken is tasty. I think it's more sapid than how we Cebuanos cook chicken bbq.

Yes your right. Lechon baboy or roast pig is one of the Filipino's delicacies. And without a lechon the celebration will not be complete. In every occasions like birthdays, special holidays, weddings and etc lechon is always there (hahaha, laging presents).. Im in manila but i prefer to order lechon cebu everytime we have an occasion here. Masarap kasi ang lechon cebu. Totoo hindi na kailangang lagyan pa ng liver sauce or mang tomas kasi malasa na sya. At macrispy pa ang balat.
